Cinnamon Triangles

Recently the we had some eggs to use up, so the kids and I decided to make a new recipe.  We called it Cinnamon Triangles.

1 cup packed brown sugar

1 cup butter

1 egg, separated

1 teaspoon vanilla

2 cups unbleached flour

1/4 teaspoon salt

1 teaspoon cinnamon

1 cup chopped pecans

Heat oven to 275 degrees.  Mix vanilla, egg yolk, butter, and brown sugar.  Stir in cinnamon and salt.  Stir in flour.  Spread in an ungreased 15 1/2 x 10 1/2 x 1” jell roll pan.  Cover the dough wit the unbeaten egg white.  Spread the pecans on the dough and press them in.  Bake for 1 hour, cut into squares, then triangles.  Cool and Enjoy!
